Mimus Polyglottos is a bird that can normally be found in North America, in the Texas region. As a world traveler, we recognize its elegance, we imagine it as a very social individual for having as it's main characteristic, the ability to sing the sounds of other species.

The grapes in this Mimus Branco 2020 are predominantly from the Rabigato and Viosinho varieties. The vinification, preceded by thermal correction of the grapes, was done with total destemming and gentle pneumatic pressing.
Fermentation took place at a controlled temperature between 14 and 16ºC.
The wine aged in stainless steel on fine lees, until bottling.
From the Gravançal vineyards, planted since 1989, we selected the best grapes to produce this wine.
Fermented at controlled temperature, the extraction was “spout-open”, preceded by slight maceration, aged for 9 months in French oak barrels with bâtonnage.
It is bright, citrus, has complex aromas, unctuous, with a long aftertaste.
About 80% of the grapes in this wine come from the Syria and Rabigato varieties. The vinification was with total destemming and soft pneumatic pressing.
Fermentation took place at a controlled temperature between 14 and 16ºC.
The wine aged in stainless steel on fine lees, until bottling.

The winemaking occured at our wine cellar using total de-stem.
The wine aged for 16 months at french oak cask.
Limited edition of 65 bottles.
The grapes in this wine were harvested in the first week of September. The predominant varieties are Touriga Franca, Touriga Nacional and Tinta Roriz, which were de-stemmed and fermented in stainless steel vats at controlled temperature.
The wine aged in 225 liter French oak barrels for 12 months. After storage, it was bottled in 75cl bottles in August 2019.
